  • 1 lb fettuccine pasta or other long pasta
  • 1/4 cup unsalted butter 1/2 stick
  • 1 cup heavy cream
  • 1 cup freshly grated Parmesan cheese plus more for serving
  • 1/2 tsp salt or to taste
  • 1/4 tsp freshly ground black pepper plus more for garnish
  • 1/4 tsp garlic powder optional
  • 1 cup pasta cooking water reserved
  • 2 tbsp fresh parsley chopped, for garnish

Method
 

  1. Bring a large pot of salted water to a boil. Cook the fettuccine according to package directions until al dente. Reserve 1 cup of pasta water before draining.
  2. In a large skillet over medium heat, melt the butter. Add the heavy cream and bring to a gentle simmer. Cook for 2-3 minutes, stirring constantly, until slightly thickened.
  3. Reduce heat to low. Gradually whisk in the grated Parmesan until smooth and creamy. Stir in garlic powder, salt, and pepper. If too thick, add a splash of reserved pasta water.
  4. Add the drained pasta to the skillet. Toss to coat evenly, adding more pasta water if needed for a silky consistency. Serve immediately garnished with parsley and extra cheese.
