Bring a large pot of salted water to a boil. Cook pasta according to package directions until al dente. Reserve 1 cup of pasta water, then drain.
Season chicken cutlets with salt, pepper, and 1/2 tsp Italian seasoning. Heat olive oil in a large skillet over medium-high heat. Cook chicken 3-4 minutes per side until golden and cooked through, reaching an internal temperature of 165°F (74°C). Transfer to a plate.
Reduce heat to medium. Add minced garlic and sun-dried tomatoes to the same skillet. Sauté for 1 minute until fragrant. Pour in broth, scraping up browned bits. Simmer for 2 minutes.
Stir in heavy cream, remaining Italian seasoning, and Parmesan. Simmer until slightly thickened, about 2 minutes. Add spinach and stir until wilted. Season to taste.
Slice chicken. Add drained pasta to the sauce, toss to coat. Fold in chicken slices. Serve in bowls topped with extra Parmesan and fresh basil if desired.
