Ingredients
  

Pasta Salad
  • 1 lb bowtie pasta (farfalle) dry
  • 6 oz diced salami cut into small cubes
  • 1 cup cherry tomatoes halved
  • 1 medium red bell pepper diced
  • 1/2 cup sliced black olives drained
  • 8 oz fresh mozzarella balls (bocconcini) halved
  • 1/4 cup diced red onion finely chopped
  • 2 tbsp fresh basil chopped, for garnish
Creamy Italian Dressing
  • 1/3 cup mayonnaise
  • 3 tbsp red wine vinegar
  • 1 tbsp extra-virgin olive oil
  • 1 tsp dried oregano
  • 1 tsp garlic powder
  • 1/2 tsp salt plus more to taste
  • 1/4 tsp black pepper freshly ground

Method
 

  1. Bring a large pot of salted water to a boil. Add bowtie pasta and cook according to package directions until al dente (about 10-12 minutes). Drain and rinse under cold water to stop the cooking and cool the pasta. Drain well and transfer to a large mixing bowl.
  2. In a small bowl, whisk together mayonnaise, red wine vinegar, olive oil, dried oregano, garlic powder, salt, and pepper until smooth and creamy.
  3. To the bowl with pasta, add diced salami, cherry tomatoes, bell pepper, black olives, mozzarella, and red onion. Pour the dressing over the top and toss gently until everything is evenly coated.
  4. Cover the bowl with plastic wrap and refrigerate for at least 30 minutes to allow flavors to meld. Just before serving, garnish with fresh basil and adjust seasoning if needed.
