Ingredients
  

Pasta
  • 2 cups dry fusilli or rotini pasta or any short shape
Creamy Dressing
  • 3/4 cup mayonnaise full-fat for best texture
  • 1/2 cup plain Greek yogurt or sour cream
  • 1 tablespoon Dijon mustard
  • 1 tablespoon fresh lemon juice
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon salt plus more to taste
  • 1/4 teaspoon black pepper freshly ground
  • 2 tablespoons finely chopped fresh dill plus extra for garnish
Vegetables & Mix-Ins
  • 1 cup diced celery about 2 stalks
  • 1 cup diced red bell pepper seeds removed
  • 1/2 cup finely diced red onion
  • 3/4 cup frozen peas thawed
  • 1/4 cup chopped fresh parsley optional

Method
 

  1. Bring a large pot of salted water to a boil. Cook pasta according to package directions until al dente. Drain and rinse under cold water until completely cool. Drain well.
  2. In a large mixing bowl, whisk together mayonnaise, Greek yogurt, Dijon mustard, lemon juice, garlic powder, salt, pepper, and chopped dill until smooth.
  3. Add the cooled pasta, celery, bell pepper, red onion, peas, and parsley (if using) to the dressing bowl. Fold gently with a spatula until everything is evenly coated.
  4. Cover the bowl and refrigerate for at least 30 minutes (or up to overnight) to let flavors meld. Before serving, stir again, garnish with more fresh dill and a grind of black pepper.
